Strawberry & Lemon Olive Oil Ricotta Cake

1.5 cups all purpose flour
¼ tsp ground cardamom
1 tbsp baking powder
½ tsp salt
3 large eggs
1.5 cups ricotta cheese (you can sub Greek yogurt)
¾ cup sugar
½ cup olive oil
3 tbsp lemon juice
Zest of 1 lemon
1 tsp vanilla
2 cups strawberries, some diced & halved

Preheat oven to 350 F
Prep springform pan (9 inch) by placing parchment and spraying with non stick spray
In a mixing bowl, add flour, cardamom, baking powder, and salt. Give it a good whisk
In a blender, add the eggs, ricotta cheese, sugar, olive oil, lemon juice and zest, and vanilla. Blend for a few seconds until combined
Dice up 1.5 cups strawberries, leaving about half a cup halved (for the top), and fold in the diced strawberries into the cake
Pour batter in to the prepped springform pan
Give the pan a gentle tap to let out any air bubbles
Line the halved strawberries on top in any look you want
Bake for about 45-50 minutes, until golden brown on top and a toothpick comes out clean when inserted in the centre
