Ingredients:
170g softened unsalted butter
165g light brown sugar
100g granulated sugar
1 large egg, room temperature
1 egg yolk
2tsp vanilla extract
215g plain flour
½tsp salt
200g white chocolate chips

1) Preheat your oven to 180°C/ Gas Mark 4/ 160°C (fan).

2) Line an 8.5" baking tin with baking paper.

3) Add the butter and both sugars to a large bowl and cream them together with an electric whisk until light and fluffy.

4) Add the egg, egg yolk and vanilla and whisk until really thick, light and fluffy.

5) Fold the flour and salt in gently until just combined.

6) Add the chocolate chips and fold them in gently.

7) Scoop the mix into your tin and smooth it out with the back of a spoon.

8) Bake for 20 minutes until crisp and golden brown on top, with cracks around the edges (it shouldn't wobble when shaken.)

9) Let it cool fully in the tin.

10) Enjoy!

This is a perfect textbook Blondie.
When I had a bakery business a lady told me I was wrong about these, because people sometimes make blondies like Brownies and add white chocolate, they're so sweet! I told her a blondie is a chewy American dessert and that I don't really like white brownies so I don't make them, she told me I was wrong around 16 times until I asked her "if you don't like them, why do you buy a Friday night box every week?" I hated how she would make me doubt and forget my success, I was always respectful to her, but inside I prayed that she got the same treatment so she could taste her own medicine x x

Just a easyyy tip to really line your pans and not have crinkly paper... set the paper below the tin and cut diagonal lines toward the corner of the pan on all 4 corners. Then it will set down in the tin so perfectly!! And yes depending on the size of the paper or tin you may have to cut like an inch or for rectangular pans you do the same way and if it doesnt fit or set in easy you may need to make the cut longer towards the center. This works with circular pans too BUT you have to do a decent amount of cuts and a bit longer than needed for it to drop into place with the square/rectangul pans.

recipe if you measure in cups ::

3/4 cup softened unsalted butter
3/4 cup light brown sugar
