I hardly ever consume bread yet I admit that sourdough has always been my favourite. I don't consume bread due to the fact that I can eat a whole lot of it just with olive oil and feta cheese. However, sourdough bread brings back memories, my grandmother ( mother of my father ) used to make and bake her own sourdough bread and I've never come across a bakery with sourdough of such quality and taste. Cheers.

I'm assuming that your post is referring to sourdough bread made with store bought wheat flour. There is a subset of people who mill their own grain and use it promptly, so the complete nutrition matrix of the wheat berry is present. How would the use of fresh ground wheat affect your conclusions. Thank you.

Autumn, thanks for all your nutrition and health sharing; I always find your videos helpful and appreciate the efficient delivery you manage so well. I gave up bread, pasta, rice etc first of 2021, so over one year now. (I used to wear US size 10 jeans back then; since last summer, I wear size 6 jeans). I hated putting up my beloved Sunbeam toaster, but I managed and don't seriously miss any of that high carb stuff and I LOVE no bread crumbs sneaking into kitchen drawers and you name it. Grocery shopping is so much simpler and I do enjoy plenty fat and protein and low carb, (mostly leafy greens, brassicas, berries, occasional banana thanks to you introducing me to frozen nannas, avocados, olives, sauerkraut, kimchi) and IF .. my eating window is usually 4-6 hr but may grow a bit soon as warmer weather/mowing season arrives .. close now :) Thanks again!

I don't think I'm carbs sensitive, I lost over 60lbs without cutting out carbs but I eat less. I think sugar is the worst for me because when I eat it, I just want to sleep and I have been doing pretty good with cutting it out of my diet

Thank you for clarifying this myth! I get curious when people say it is a healthy bread! I loved sourdough bread, it was my choice of sliced bread with my meals because if it’s texture, density, and taste! But, ever since I started my low carb journey, I’ve been making my own nut breads!

Autumn. Thank you for your great content! A question. I watched a conference that took place in Germany several years ago that compared various wheats. Specifically ancient grains to current wheat and their flours. I don’t recall exact numbers anymore or even all the names of the different varieties but I do recall that Einkorn flour was significantly lower in gluten, and carbs. It also was higher in protein and fiber. I assumed, perhaps incorrectly, that making sour dough out of Einkorn whole-wheat would be a relatively safe carb if eaten in a small amounts. If it is long fermented I would assume even more of the carbs would be converted. Thoughts? Any familiarity with this? I was unable to find a nutritional analysis of a sourdough whole wheat einkorn bread. I will say it is a heavy earthy bread and so far everyone that has tried it loved it. Of course they are mostly KETO folks so probably thrilled just to get sourdough of any kind. 😋 Thanks again for what you do for us!

i found out that im not carb sensitv on your quiz. i found out for my goals that ketobread is good but only in the morning paired with protein and fat .fiber i get from the bread im a huge fan of yours and cant wait for the next challenge and your new recipes + youtube videos. yours truly julianna from germany

Can't eat anything
I can't do the grinding. We arn't even allowed to grow food. Was ready to eat sourdough, not that is runined.. my kitchen is super small. I just want to drink a powder with everything I need. Don't want to eat anything anymore or just forget it all.

What bemuses and confuses me is using carbohydrates as a weight-gain vehicle. I need to gain 25 pounds but i want to do it responsibly. Today i ate 1/2 pound of sourdough bread. I feel surprisingly strong, because i'm usually starving myself, but the blood sugar spikes were conspicuous.

i think maybe i'll just assimilate sourdough into meals, exclusively. Since eating it in isolation appears to be utterly intoxicating

We’ve been doing keto and fasting. I know there will be a lot of glucose and cholesterol in our bloodstream while our body is getting rid of it. Should we stop keto and fasting prior to getting our blood work?
