If its stew, soup or something cooked with sauce and put meat with bone i agree it taste better than the ones without bone, but if its like that, theres no difference theres not enough time to extract umami from the bones when its cooked like that

Well...obviously...the bone meat is not a myth but a fact from a time when steak wasnt a way to cook. Classic way of cooking is boiling, broiling, or sun drying. Thats when the flavour from the bone comes out except for sun drying

Yep, people pay extra for a steak that’s harder to cook evenly without any extra flavor. Unless you can scrap out the marrow and spread it like butter.

I can see one scenario where it would be true. If it were a bone in roast with the bone marrow intact, then let it roast in the oven, the bone marrow become like meat butter and lightly melts into the roast...
