Don’t just cut across the grain, make sure the cut comes down to the cutting board diagonally. This *adds a second level* to the already amazingly tender cross-grain cut. Oh and a third _sometimes useful option_ is to make several cross hatched cuts across at least one side before searing. If you sous vide, make sure to rest once after the bath, then trim for fat (render this in the pan and use it for the searing instead of oil, then give the crunchy bits to your dog). Then sear, baste with butter and herbs etc, rest for 5, and cut as described above. This way your steaks won’t need any cutting at the table. The end pieces you serve should have the same width as your finger roughly. Oh and hone the blade before cutting, you really want to make each cut in a single smooth motion, no sawing back and forth.

This generally only works on cuts of steak that have the fibers running side to side. You can’t really cut against the grain on most steaks because the fibers are running up and down.

Do note that a lot of steaks are already cut against the grain, because they're basically a slice of the muscle. Not all, but a lot.
This means there are a lot of steaks you can't really cut against the grain.
