My sweet mom was ahead of her time. She always peeled and cut up the broccoli stalks and added them to soups and stews! Now I do the same, and include stir fries, too! Thanks Dr. Li!

My dear grandmother-in-law taught me to use cauliflower stalks. She would use up most of the stalk, especially during her younger days when times were lean and food had to suffice.
She would also use the tender shells of green peas, the soft rinds of melons, raw bananas with their peels on..and such with most vegetable parts that we normally discard. She would churn out simple and nutritious meals that would satiate the entire family.
Am so grateful to her for teaching me so much.

😂 I told my daughter once that I wished I could just buy the stalk/stems. I love them steamed with a little butter and a squeeze of fresh lemon juice! Have a wonderful day! ♥️🥦 ♥️

Thank you for the information Dr. Li. I would add that there is 100 times more sulforaphane in broccoli sprouts than in mature broccoli and it’s easy to grow broccoli sprouts in a jar. Also sulforaphane forms when we bite the broccoli and an enzyme and a precursor compound, get together and the enzyme helps turn the precursor into sulforphane. But if that enzyme is heated over 100 degrees Celsiu (boiling water temp) it inactivated. So it is best to eat your broccoli or sprouts raw. I add them to smoothies.

Good news for me! I love the stalks! The florets are sometimes overcooked and mushy, so I always go for the stalks. I like cabbage cores and pineapple cores also. Thanks, Dr. Li and aloha!

I hated broccoli until I became pregnant with my daughter. I love it now. I like it long stemmed. Now, l'll try the stalk, too.

I always do that too Dr. Li. I cut the stem slim or thin and add it too my stir fry.

I have an inexpensive hand-crank spiralizer. It is great for breaking down the stalk to the consistency of shredded cabbage--great for stir-fries or soups!

When I cook broccoli & cheese soup I always use the stem also, & when we have broccoli & cheees sauce I cut the stems into chunks & they are thrown in with the broccoli in the steamer. My Mum always taught me to use every part of a vegetable I can, so it always horrifies me when I see people throw away parts like that! Thanks Dr. Li for your great, informative videos!

Cut the main stem off just beneath the florets ( put the florets aside to steam cook) ..thinly peal the outer fibre off the main stem and eat the inside raw.. delicious!

I eat thw whole stem !!!! delicious !!! Also eat the white part of the watermelons !!!! 🍉 Delecious too !!!! They both are super crunchy and healthy !!👍🏻

I take a mandolin and slice up the stems very thin cross ways as a main part of a classic broccoli salad (whole broccoli, red onions and garbanzo beans marinated overnight in a vinaigrette). The stems are delicious!
