Kohlrabi has two seasons of growth in our climate when you can sow it now for harvesting in June before it flowers. Then sow again in July for harvest autumn and winter.

I sowed this one on the 4th of July, transplanted early August. This variety is called ‘Blaril’ and it survives moderate frosts.

Kohlrabi! In German Kohl means cabbage and Rabi means turnip which makes it the perfect hybrid of both. It is actually the swollen stem of the cabbage and can be used in any way as we use cabbage!

You can also use the leaves to make this pickling recipe or add other vegetables to complement the flavour of kohlrabi.

INGREDIENTS:

- 1 x Kohlrabi
- 10 x Radish
- Pepper grains
- 3/4 Bay Leaves
- Dill
- 2 x Garlic Cloves
- 3.5% saltwater (9g salt x cup of water)
- 1.5 Tsp Sugar x cup of water (optional)
- Vinegar (vinegar to water ration 1:1)

I love making these. For a change, I add hot oregano, serrano peppers, onions, garlic, carrots, and radishes. No sugar in the brine just non iodized salt, peppercorns, organic vinegar and filtered water.

Italian American here. We do cucumber, onion, garlic, tomatoes, fresh basil, rosemary, and a pinch of sage in red wine vinegar, and olive oil from Palermo.

Marinate for a day, or forever.

Pickling is great for the flexibility. I tend to lean towards fermentation, but the time and space/temp requirements for it definitely bring out the appeal of pickling. Thankfully with fermenting it's usually just one big-ish job a year with bulk batches and storage (but a similar argument can be made for pickling 2 or 3 times a year in batches lol).
