Brook and I went offshore and trolled some planers for Tuna. We caught three species little tunny, blackfin and skipjack tuna. Bonito aka False albacore are one of the most feared fish in regards to table fare. Often regarded as "trash fish". I out together a nice surf and turf meal, thanks to the butcher box, for providing the beautiful ribeye steak!

Great recipe. I've eaten small bonito before, not too different tasting from tuna, but slighly mushy. It's really great using your platform to push the envelope and break the viscious cycle of so called "trash fish". That was a freakishly large lizard fish and on the troll too. I'm from So Calif. I used to fish for Pacific Bonito, I would gut, bleed them out, cover in ice till I get home, fillet, with skin on, scrape meat from them with spoon,
leaving blood line, add spices, (your choice), add 2 eggs with 2 fillets, make patties fry in a skillet. Add your own condiments.

Love to see you running rigged ballyhoo. I’m from boynton Beach and I run rigged ballyhoo on leads and find them way more effective than bonita strips especially for wahoo and it’s wahoo season baby!

We love this fish here in my country libya and we have hunting season for it from mid September to last January
Maybe bcoz we dont have many species here

When i was a kid in the 60's black drum and sheephead were considered trash fish. I have a friend who actually fishes for hardhead catfish he took a batch to were he works and everybody says it was great.

If you grind the chimichuri too much it gets bitter. I've made same mistake. Just pulse the grinder a few times. Chop the stuff way smaller to begin and do smaller batch in grinder.

I'm glad someone else knows that the "Bonito" isn't actually an Atlantic Bonito, and it goes by many names and depends on what resource you're using as to which name you'll find to ID it. To me they will always be a Little Tunny!... You should close the lid on your grill when you cook. For those steaks, try preheating your grill to 400*F and put your steaks on and close the lid. Cook the first side for 5 min. then flip and close the lid and cook 4 more minutes. Try it!... also, bleeding your Tuna family fish as soon as you catch them will give you more and better meat. Lift the gill cover and cut a half moon where the edge of the gill cover was touching the fish.

For chimichuri sauce you have to mince all ingredients never blend it takes little longer but you will then notice the difference. Parsley, red onion, garlic, chili pepper flakes, little bit of lime juice or vinegar, pinch of salt and sugar lots of extra virgin oil!! Just little tip

True chimmichuri the best! : Finely mince a bunch of fresh parsley, a touch of fresh oregano and a clove or two of garlic, put in mixing bowl. Add a few pinches of fresh chilies or crushed red pepper flakes or both... Add 1/8 red wine vinegar and douse in quality EVOO till the herbs and spices till just submerged. Mix well and it marry for a bit. BAM!!! Excellent on grilled beef, fish, and chicken and everything! Even on vanilla ice cream🤗
