Cashews are incredibly versatile. I made quite a good faux tuna with it that is superior to "tofuna" style tune fakes.

I made the Alfredo like sauce today and served it over raw zucchini spaghetti and it was awesome!. I still eat cooked vegan foods and want to incorporate more raw foods into my diet. I added about 1 T of lemon juice, 1/2 t onion powder and after all was blended well. then about 1/4 c. fresh parsley and a few leaves of fresh basil pulsing in the blender until chopped. The only thing I did wrong was eat too much of the sauce! It is delicious but very rich.

you could use whatever nut you prefer. pistachios and macadamia nut are used a lot too for cheese sauces

I eat a lot of raw food (fruit, vegetables, nuts) as part of my diet (never was into cooked vegetables to begin with). I made this sauce once by accident and used it as a base for anything from Italian to Indian food. I hadn't ever used thyme before so I did a while ago. It gives it an earthy taste. Not bad, not bad.

You can also soak the cashews for an hour or so. You will get a creamier sauce. A good base for non-dairy "Ranch" dressing.

Very good recipe. I put it over raw organic zucchini, carrots & red pepper. 3 garlic cloves are a bit much, so when I used 2 garlic cloves, it tasted just right.

I made this today. Thoughts:

- Probably best NOT to advertise this as "Alfredo" sauce.
- Then again, it is not completely unlike the flavor profile. I have had a lemony "real" Alfredo sauce and the consistency and the lemony-ness DO "sorta" match
- I only liked this at room temp. Cold and heated, not so much.
- REALLY good when mixed with angel-hair shirataki noodles
- REALLY good on just about any vegetable

This is a KEEPER!

Not raw, as in they're subjected to a heating process. (Someone else commented about that process.) Soaking the cashews makes them easier to blend. So, you're correct -- it's for the consistency. I don't know about the nutritional value of them, but they sure are versatile in vegan food prep. Although.. i have heard that they're not healthy, not true nuts, etc. But i don't know enough to want to give them up.

That would apply to raw nuts. Cashews aren't usually raw (even when labeled as such).

I soaked the cashews overnight and it was perfect. Instead of water I used rice milk. Yummy!

why is it always cashews that are used for making "cheese" type sauces? Can almonds be used instead? Pr maybe a mix of both?
