Making Fresh Mozzarella Cheese from our Raw Milk

Our dairy cow, June, produces more milk than our family of 9 can drink. One of my favorite ways to use it all up is with homemade mozzarella cheese. It takes 30 minutes and is very easy for beginners. I like to make a protein rich soup with the resulting whey. Though you can make the cheese with whole milk, I prefer to first take the cream off and make grass-fed raw butter!

Here is the recipe I used
1 1/2 teaspoons citric acid dissolved in a little water
1/4 teaspoon animal rennet dissolved in a little water
1 gallon milk

1. Add the citric acid/water mixture to a large pot. Add the milk to the pot. Heat to 100 degrees.
2. Remove from the heat.
3. Add the animal rennet/water mixture. Incorporate throughout, making sure to get it all the way to the bottom of the pot but not agitating it too much.
4. Still the milk, and add a lid. Allow it to sit for ten minutes.
5. Cut the curds.
6. Strain off the whey.
7. Press out any excess whey.
8. Add the cheese back to hot water and stretch it. (You could also heat it up in a microwave.)
9. Stretch it a few more times and add salt to taste.

You can use that whey to make ricotta. Ricotta is made after mozzarella and it is the BEST ricotta you will ever eat.

I think it’s so wonderful and now days, so smart to be so efficient making your own food. Between your cow and chickens and your garden PLUS you homeschool your children, you are pretty self sufficient. God bless you and your family.

I don't have any animals to feed my whey, so I freeze it and use it to make pancakes or I add it in to my smoothies instead of ice as an added protein boost! Love your ideas ❤️

Even spoiled milk is usable for cheese and butter, and as my grandmother used to say "waste not want not." Love your videos, Lisa. Btw, I saw where YT gardeners were using whey to water their veges and fruits too

My guess is Pickled eggs!!!! My husband loves them! His favorite is dill pickled eggs! And so super easy to make and great protein and a quick and easy snack! Use the leftover brine to pickle onions. So good on sandwiches

I only use rennet. According to recipes on New England Cheese company raw milk doesn't require citric acid. I've done it both ways and was satisfied with the cheese.

I’m so glad you did this video. You always talk about making cheese n butter. This gave me so much knowledge in how to do this n I thought it was so interesting. You could add the whey to smoothies, pancakes etc. It is very good.
You can actually buy fruit-whey drink in the freezer section here in Germany (of course with a lot of sugar, when you buy it). But you could make something like that on your own and more healthy. It is really refreshing.

We are freezedrying our eggs. I've scambled a ton and freeze-dried those, but mainly I am just breaking them on the trays, I can get about 22 eggs per tray, and freeze drying them and putting them in mylar bags. I do think I want to try putting some raw in ice cube trays and then putting those in baggies and using them as I need them...but I am focusing on getting as much in my home shelf stable as I can. This freeze dryer, although they are costly, was worth every penny bc it is allowing me to shelf stable things I couldn't have otherwise. ~Kelly
