Just made this for dinner after seeing this post this morning. It is *phenomenal*

Making this for dinner tonight! 
I always use my cutaway tofu for "ground round". I lightly process or chop them and mix with some onions, garlic, some spices and cook them in some oil on the pan. Or use them as a filling for vegan wontons.

AGHHHH!! THIS WAS SO GOOD! I omitted the tofu fillets on the 2nd time I made this. I just don't really like tofu. Once I got the exact same Edmond Fallot dijon mustard (Grey Poupon IS too strong) and a little jar of calabrian peppers it was flawless. I did add some minced shallots and cooking white wine to the pan with the garlic and boiled the pasta with a half of shallot, 3 garlic cloves, lemon zest and a chunk of zucchini and salt. Then when it came time for the cashew cream I used the pasta water to soak the cashews and then the boiled garlic cloves, shallot and zucchini added into the cashew cream blender mix. Towards the end while it all simmered I popped in some cherry tomatoes til the skins broke. Wow. Just wow. Thank you for this recipe🙏🙏🙏

This actually looks insanely good and right up my alley. I'm not vegan but always very happy to see vegan/vegetarian recipes that really go the whole way and become something special of their own - will definitely be making this one soon, and hope to add another plant based staple dish to my life!

Nasoya super firm tofu is GOATED. I havent purchased any other kind since I found it a couple years ago. No pressing right out of the package, so less prep, awesome texture, and widely available where I live.

I was so excited to try a tofu recipe where nearly all the ingredients were staples in my house already. The only things I had to buy for this were the tomatoes and the peppers. I also substituted the cashew cream for coconut cream so I would have less dishes.
It turned out WAY better than I was expecting. This is now easily one of my favorite tofu recipes I've ever tried. I would absolutely make this for a tofu skeptic or any non vegan, and I expect to start making it for myself on a regular basis. Best served on rice imo, but pasta is great too. :)
