How to make tofu from soy beans with a very common and easy to find ingredient -- rice vinegar or fresh lemon juice. That's the acid solution.
Correction: recommend simmer the soy milk for 15 minutes if you have considerations for trypsin inhibitor.
There are several commonly used coagulants in Chinese cuisine. The first group is salt coagulants (盐卤) including gypsum (石膏粉) and Nigari salts (In Sichuan cuisine we call this 胆巴). And the second group is Acid coagulants including GDL (葡萄糖内脂), mainly for super tender tofu and tofu pudding. But regular acid including rice vinegar or even lemon juice can help the soy milk becoming solid too. I demonstrate about how to make tofu with rice vinegar in this video. But other coagulants works too.

After watching a LOT of videos about how to make tofu, yours was the most helpful because it was extremely clear and the video showed everything that a novice would need to see. I didn't work to end up with 5l of soy milk (which seems like a lot...), but it all worked out great!! Thank you!

Hey! I just finished making the tofu it took a lot of time and patience. I used synthetic vinegar instead of the rice one bc that's what I had and it didn't give any changes in the results it was perfect. I used 250gms of soya beans and it made approximately 2lt of milk and then 500gms of tofu! It was way cheaper than making cottage cheese or even just buying tofu from the store

Hi from Ireland. I am in my 50s and this is my very first cooking and eating tofu. I never had it before. While watching this video, I am right now frying tofu. I cannot believe how silky soft the tofu is and how easy it is to cut it into cubes. Before, I thought it would be as hard as cheddar cheese.

This is exactly how to make cheese from dairy milk, Great video. This is the first time I tried fresh tofu. Wow, it tastes so much better than store bought. Just had a bowl of fresh tofu seasoned with soy sauce, garlic, ginger, chilli, sesame seeds, sesame oil and green onion. I finally understand why asians eat so much tofu. I used to buy commercial tofu and often to use it before it expires, what a waste. Making fresh tofu is economical as well. Thank you so much for posting this

Finally, I made a perfect block of tofu!!! Well, I still have to eat it, but it’s holding together so well following your instructions!! It’s soaking in water atm. I thought I had to order these coagulants that you cannot find in stores to get this process going. It did come in the mail, but after watching your video, I opted for the rice vinegar as I always keep that stocked in my kitchen. It’s better to use ingredients that are at hand and easy to find. I’m so excited to try it with some homemade Kim here. I hope it tastes great without having to cook it. Great video!! Thank you. Can you please post how to make some sauces with that extracted water?
