The perfect side veggie dish - garlic sautéed kale

🥬This simple side is perfect if you’re trying to get #MoPlantsLessProblems because it pairs well with so many dishes!
👩🏾🍳 I like to call it a “sautéed salad” 🤣 but you can call it Garlic Sautéed Kale.

Ingredients:
- 2 large bunches of kale leaves, washed (remove from stem into bite size pieces) or about 4 loosely packed cups
- 3-8 garlic cloves, diced (depending on preference)
- 1/2 cup water
- 2 tbsp olive oil
- 3 tbsp balsamic vinegar
- 1 tsp cayenne (if you’re feeling spicy)
- Salt, black pepper to taste

Instructions:
1. Heat olive oil in a large pan on medium-heat, add garlic and cook until it starts to brown
2. Add kale to same pan, turn the heat to high and add the water. Be sure to mix the kale in with the garlic. Cover and cook for about 4 min (you want them soft but still green!)
3. Remove cover and stir occasionally until most of the water has evaporated then season to taste. Add your vinegar and mix to combine!

Kale stem ideas: save for homemade veggie broth, freeze and add to smoothies, or treat them like dense celery and use in your favorite meals!
