what IS gluten? gluten is not a carbohydrate, its a group of proteins. some of us are gluten intolerant. e.g. celiac disease

celiacs often have non gastrointestinal symptoms (headaches, numbness or skin rash)

if you suspect celiac disease, get tested. treatment for celiac disease: eliminate gluten

was it the gluten? control group without gluten. bread with or without gluten. placebo without gluten also worsened symptoms. so we cant blame gluten

but maybe gluten was masked by their symptoms. test gluten vs placebo

trial: Gluten did not induce Gastrointestinal Symptoms. neither the placebo nor the gluten group reported symptoms. gluten is safe in general

gluten is like strawberries. gluten is ok for healthy people and Not ok for those with celiac disease. people negative for celiac disease but gluten intolerant: non celiac gluten sensitivity

symptoms after gluten-containing food and celiac disease & wheat allergy ruled out=NCGS

gluten intolerant people: gluten vs placebo. gluten intolerant people, some experience symptoms after eating gluten

trial: “symptoms increased with gluten in minority of participants”

16% of "gluten intolerant" were confirmed. some who test negative for celiac disease still show sensitivity to gluten but many lumped as gluten intolerant are intolerant to other components

more accurate to call it “non-celiac wheat sensitivity”?

celiac disease may be missed, or a mild form. People without full blown celiac disease but are gluten sensitive may handle small amounts of gluten

gluten in junky foods, could be an artificial component rather than gluten itself

barley: if u feel a reaction, it may be gluten. if you're fine, probably not gluten intolerance

negative for celiac disease but reaction to gluten? you could be sensitive to gluten

should we all cut gluten? Gluten is not essential. some concerns that cutting gluten may worsen dietary quality

gluten free diets = low in key nutrients

study: lower risk of heart disease associated with whole grains

“avoidance of gluten may result in reduced consumption of whole grains. promotion of gluten-free diets among people without celiac disease should not be encouraged."

probably not inherent to gluten free diets. Diets low in gluten don’t have to be low in fiber

if you have to avoid gluten, avoid replacing it with ultrprocessed gluten free foods. replace the 3 gluten grains with the 9 gluten free ones

Let me tell you my story with gluten intolerance because I find it super strange. I used to eat terribly and was pre diabetic and eczema everywhere etc. Then I changed my lifestyle and my eating habits, adopted intermittent fasting for 3 years and after a while, I was healthy again, except all of a sudden I became intolerant to grains and especially wheat and very especially refined wheat products so I was off breads, cereals etc the whole lot. I still occasionally ate a pizza or a sandwich every two months or so as a treat but it always ended up in pain in my gut. Then I started bulking, working out a lot etc and began to eat more and I stopped intermittent fasting and a result and since then I can suddenly eat grains again without any of the symptoms I used to experience!

The only variable here really is that I started eating more food in general. I always exercised a lot so it wasn't the working out. Granted it's a different kind of exercise but I doubt that is it. I feel like it must be related to my gastrointestinal flora but I'm no professional so really I have no clue but I do find it mysterious.

Thank you Gil for your no nonsense and fact checked reporting. I was experienced stomach inflammation that caused abdominal pain for 2 years -I tested negative for celiac and my specialist claimed it was due to stress and poor diet of which I had neither. Desperate I tried a FODMAPS diet that is now simply gluten free and the inflammation went away. It seems some in the medical profession do not recognize NCGS.

Thanks for your amazingly balanced content! Here's my take on wheat/gluten: When I was a teenager, I had major issues with food intolerances that literally wouldn't let me sleep (main ones: gluten, dairy, eggs, yeast), stress, my immune system, etc. I got diagnosed with leaky gut and underwent a lot of different attempts at solving the whole picture. While I now believe that it's worth solving piece by piece, elimination diet was a savior in these times. Time after time I ate a more diversified diet and gradually re-included my intolerance foods, which were not associated with symptoms anymore. Ten years later, I still somewhat avoid some foods, especially gluten and yeast - not because I believe I get sick immediately, but because I believe these two are omnipresent and are inviting to eat more one-sided.

Nailed it! I messed around with my 'gluten sensitivity' for years. Then we figured out I'm sensitive to calcium proportionate (a common preservative in flour) and baker's yeast. So, organic wheat products from cowscous to pasta are just dandy. I do well with non-yeasted wheat products like puffed wheat cereal, crackers, and anything made with baking powder or soda. It was stupidly hard to tease out the truth from all the confounding factors! Great content, keep up the good work!

Thanks a lot Gal. Soup barley seems to be a great self test experiment for people. I think that enriched flour could be a problem for many people. Aside of the refinement, it has a lot of additives, preservatives and sometimes is present in prepackaged products. For those who can, intact whole grains for the win 👍🏼

So for most of us who do not have sensitivity to gluten or wheat, we should eat gluten because avoiding it may lead to a lack of grains which leads to deficiencies. Good to know!

Great video - some GIs think the answer to this mystery may involve the microbiome and dysbiosis. The bottom line is that it's really a big unhealthy marketing fad in most cases, making it even harder to find the true NCGS patients to focus on.

I had 10years off gluten with three periods I ate gluten again.. my ADHD symptoms of restlessness, brain fog and anxiety got better and came back when taking it. Also the bloated stomach. And I could really clock it to when the symptoms increased. After my discovery I read an article that there was a gluten protein that could affect the brain and cause ADHD symptoms. I could be wrong. But from have been lactose intolerant since a baby. I've heard if you're lactose intolerant you're more likely to be gluten intolerant? I also reacts to oat.. but not as bad at all. (The other ADHD symptoms like speeded and talkativeness and also anxiety comes from sugar and coffee in my case. 😅) I did the elemination diet for a while bc I was in a really bad shape and took heavy meds. Along side with it It was a cool discovery to realise how much the food affected me, my skin, my mental health and my physical health. It's been a long journey with some detours. I've been off meds for 9years now and have a mental clarity I never really experienced before and feel very harmonious.

After eating wheat grains my stomach bloats up, like literally 9 months pregnant.
I also tested to see if it was just in my head - because my husband eats bread for breakfast and dinner and he's never bloated.
I decided to eat exactly what he eats for a few days.
After a few days, my stomach literally started to hurt. It was so painfully bloated that I had to lie down on the Couch and concentrate on breathing.
An allergy blood test revealed a grain allergy - to all grains!!! But not celiac.

PLUS!!! As of last week, I was diagnosed with thyroid problems (Hypothyroidism) which ALSO says to avoid Gluten.

So, I guess I just have to face it.
Avoid Gluten and Wheat.
Everyone thinks I'm just trying to be cool and following a fad....unfortunately, not.

Amazing video, I never knew that NCGS was not well understood. Seems like too many people are "gurus" who know everything with certainty...whether be it "all gluten is bad" or "gluten is fine for all except celiacs"... Novak Djokovic quit gluten and instantly improved his mood and performance but I dont think he has celiac disease...I had done the same, eliminate gluten like english muffins or wheat bran...I felt better, instantly...I guess I must have NCGS
