Best Gulab Jamun Recipe by Masterchefmom:
1/2 cup flour ( you can make it with atta too)
1/2 cup milk powder
Milk (room temp) (adjust)
1/4 tsp baking soda
3 tsp ghee
Ghee to fry
2 cup sugar
2 cup water
6-7 green cardamom
Method:
1. Mix flour, milk powder, baking soda, ghee along with milk and make a super soft dough
Note: If making it with atta, knead well so that the dough is softer than regular chapathi dough
2. Pinch small portions and make roll them into balls or oblongs using a light hand ie., do not apply too much pressure . Make crack free ball shape.
3. Heat ghee ( or oil) . They should be hot enough( not too hot or warm) , drop them gently and fry them till they turn jamun colour .
4. Drain and set it aside.
5. For the sugar syrup, add 2 cups of water to 2 cups of sugar. Melt it over low/ medium heat, stirring occasionally. Add in 6-7 crushed cardamom pieces.
6. The sugar syrup needs to get sticky. Just take touch the ladle with little syrup( be careful as the syrup will be too hot) . It should just feel sticky. Switch off and add 1-2 drops of lemon juice.
7. Dunk all the fried jamuns into the syrup. If making with atta, allow the jamuns to cook in syrup for 2 mins and then Switch off. Let it soak for 3-4 hours
Most yummy Gulab Jamun is now ready!! Try it 👍🏻
