I buy mine at Aldi. They have great pancetta at a great price. I use it sparingly because of the salt, but it adds great flavor to dishes.

Tomorrow I'm using pancetta to make chef john's "pasta alla genovese".
An Italian dish, so Italian, many American Italians have never heard of it.
If you never had this, you need to try it. The only down side is, you will never cut more onions in your life.
