This was very helpful! Thank you! The first and last time I tried cooking duck I set off the smoke alarm. At the time I didn't realise that duck fat spatters a lot more so my poor oven was a huge mess and the house was very ducky for a couple of days.

Looks 5 star to me, slightly burnt or not. Don't know much about duck other than crispy pancake style.Another big learner here for me, and it looks super impressive. Thank You Huw. Are you back to work as a chef, who's the lucky restauranteur who nabbed you back.
