How to roast pork shoulder on an open barbecue (time lapse)

I made this following some feedback from subscriber Stuart. He told me he liked time lapse videos and we thought it would be fun to record a barbecue as a time lapse.

Whether you have a kettle barbecue, or not, you can still roast pork. If you have a kettle barbecue with a lid then you can use the lid to help cook your meat more quickly. But if you don't, you can still barbecue pork shoulder on an open or brick barbecue.

I used lumpwood charcoal to cook this. Since the lumpwood charcoal burns more quickly than charcoal briquettes be sure to start with plenty piled up. You can, of course, add more charcoal if you need the extra heat.

The pork here is cooked in a foil tray with some olive oil and red onion in the base.

Boy you’ve really opened my eyes to using a brick bbq griller. I was so focused on your traditional charcoal griller (charcoal on the bottom, food on top, close lid) that I never thought to use my brick bbq this way at all

I know this is an old video but hopefully you can tell me about how long this took you to cook.
