PROTEIN PACKED FAJITA FRITTATA 🍳🔥

Frittatas are such an underrated breakfast food. They're versatile and so easy to make. You can add whatever the f*ck you want to them! They're great for feeding multiple people or meal prepping. It's one of the few ways that I think eggs reheat well! 👌🏻

FULL RECIPE ⬇️

INGREDIENTS
- ~2 cups diced potatoes (I used golden)
- 1/2 sliced medium onion
- 1 sliced bell pepper (I used 1/2 red & 1/2 green)
- 1 lb 90/10 ground beef
- 8 @vitalfarms eggs
- ~1/2 cup milk of choice
- Shredded cheddar to your liking
- 2-3 tbsp of @fourthandheart ghee
- Everything Spicy @flavorgod (discount code: "Cal")
- Toppings: Avocado, Cilantro & Truff @sauce

DIRECTIONS
1. First prepare the veggies.
2. Heat an oven safe pan on medium heat. I used a 10 inch cast iron skillet.
3. Add in ghee or oil of choice. Once hot add in potatoes. Let cook for 8-10 min mixing every few minutes.
4. Next add in the veggies. Season generously and mix. Let cook for 4-6 min then push to side and add beef. Break the beef up and season. Let cook till browned then mix it in.
5. Add eggs to large bowl with milk and whisk. Then add eggs to the skillet.
6. Top with more seasoning and shredded cheddar.
7. Place in oven at 375 for 25-35 minutes or until top is completely firm and the edges are golden brown. (Time will vary depending on pan)
8. Remove and let cook for 4-5 minutes.
9. Plate and garnish.
