Welcome to Heo's Kitchen. Today we are making Vietnam's National dish Pho. There are many different types of Pho, this recipe is for the most basic and famous "Pho Dac Biet". Update! I've removed fish sauce from the recipe. No Fish Sauce!
Recipe for a 10L Pot:
For broth:
2-5lbs Beef knuckle bones (Use 4-5lbs if you do not add the optional meats)
1.5lb Beef Brisket
1-1.5lbs Beef Eye of Round
1-2 Beef balls
1.5-2lbs Beef Ox tail (Optional)
1-2lbs Beef Bone marrow (Optional)
1lb of Beef tendon (Optional)
3tbsp of salt
28g Hard rock sugar (More if you like it sweeter)
Salt to taste
For broth flavorings:
3 Cinnamon sticks
3 Pieces of Black cardamom
5 Pieces of Star anise
1tbsp of Cloves
2tsp of Cumin seeds
1tbsp of Coriander seeds
1.5tbsp of White peppercorn
(You can use 1-2 Pho flavoring packages as a substitute)
All other ingredients:
3-4lbs Fresh Pho (You can also use dry noodle packs)
2 White onions
2 Pieces of Ginger
1 Bunch of Green onions
1 Bunch of Cilantro
1/2lb Bean Sprouts
2 Limes
2-3 Bunch of Thai Basil
3 Red Thai Chili Peppers (Optional)
1 Bunch of Culantro (Optional)
1 Bottle Hoisin Sauce
1 Cheesecloth bag
Some tin foil
