How to make the Best Pho Dac Biet! (Vietnamese Beef Noodle Soup) 10 litre pot recipe.

Welcome to Heo's Kitchen. Today we are making Vietnam's National dish Pho. There are many different types of Pho, this recipe is for the most basic and famous "Pho Dac Biet". In the future we might explore further more into Pho Ga, Pho Chay and Pho Sate! Thank you for watching and follow Heo on Instagram "Heomeoo" for the latest food adventures.
Update! I've removed fish sauce from the recipe. No Fish Sauce!

Recipe for a 10L Pot:
For broth:
2-5lbs Beef knuckle bones (Use 4-5lbs if you do not add the optional meats)
1.5lb Beef Brisket
1-1.5lbs Beef Eye of Round
1-2 Beef balls
1.5-2lbs Beef Ox tail (Optional)
1-2lbs Beef Bone marrow (Optional)
1lb of Beef tendon (Optional)
3tbsp of salt
28g Hard rock sugar (More if you like it sweeter)
Salt to taste

For broth flavorings:
3 Cinnamon sticks
3 Pieces of Black cardamom
5 Pieces of Star anise
1tbsp of Cloves
2tsp of Cumin seeds
1tbsp of Coriander seeds
1.5tbsp of White peppercorn
(You can use 1-2 Pho flavoring packages as a substitute)

All other ingredients:
3-4lbs Fresh Pho (You can also use dry noodle packs)
2 White onions
2 Pieces of Ginger
1 Bunch of Green onions
1 Bunch of Cilantro
1/2lb Bean Sprouts
2 Limes
2-3 Bunch of Thai Basil
3 Red Thai Chili Peppers (Optional)
1 Bunch of Culantro (Optional)
1 Bottle Hoisin Sauce
1 Cheesecloth bag
Some tin foil

I had to watch hours of YouTube videos to find your video, but when I did, it made it all worthwhile. My favorite pho restaurant in Saigon was Pho 2000 (where Bill Clinton ate.) Their pho is dark from the abundance of spices, rich, and I think they use some fish sauce in their recipe. There were several other good places, but if seeking the Saigonese pho flavor, yours is hands down, far and above, the best pho making video on YouTube. I've been working on my recipe for some months after finding your video. Taking your advice, but differing from your recipe; I do not use any cumin seeds, more anise, more fennel, more cardamom, slightly more clove, less cinnamon, less peppercorn, 2 tbsp fish oil (Red Boat). I am also currently unable to find black cardamom pods locally, but green taste the same as far as I've gotten used to. I char the ginger and onion & shallots on my gas grill. Then it's about 12-14 hours bubbling slightly slower than you show (fewer bubbles coming up.) I like your boiling off the color trick with the spice bag. I also like the way you soak the way you do your meat as thin as you can before tenderizing it and the way you tenderized that tendon in the salt water bath. Wow. Those are the kind of cooking tips I really appreciate that you won't find from most people; even pro chefs and cooking classes. Yours is the real deal, seems like you've enjoyed some major family pho brewoffs. Thanks for posting this. The world needs real pho.

This is most authentic as you can get. Glad you don't put coriander leaves, lime leaves, seared your Tai, add egg and garnish with ginger. MMM im going to have tribe in mine. Enjoy having pho at home cos i can control how i want it to taste, ie more black cardamon and 5 star anise makes the flavour more intense

Loved the video... Going to grab the ingredients I don't all ready have in the morning. If I could make one suggestion, if u could maybe lower the echo in the sound, or maybe upgrade your mic, I think it will help you create a better quality video.
