Today we will prepare a delicious Prawn Risotto, its preparation is very simple and the result is amazing!

Ingredients to prepare Prawn Risotto
300 g. Arborio rice
350 g. raw prawns (clean)
1 lt. fish broth
100 g. grated Parmesan cheese
50 ml. white wine
1 onion cut into small squares
40 g. of butter
Dry chives to taste (for the preparation and to decorate)
Olive oil

There's couple of mistakes. First, just put prawns on the olive oil for a start. Without onion. Take them out after a few minutes. Then put onion. Second, don't add so much fish stock at once. You have to add liittle bit at the time and let the rice absorb it. Then add more. To finnish it off add some parmesan and butter when the rice is already cooked and of the heat.

No need to or benefit from adding the prawns until the last 2 minutes of cooking. Doing it as shown here adds extra time to the cooking and risks overcooking the prawns
