Chicken nuggets oven baked with an Italian twist

Who doesn't love a good chicken nuggets. Unfortunately they aren't that healthy, so by making your own and oven baking them you can also avoid those unhealthy GMO oils. These nuggets use a mixture of corn chips and breadcrumbs for a crunchy coating. Most people prefer chicken breast, so I used it in this recipe, but I would strongly suggest that you use chicken thighs instead, as oven baking can make the chicken breast quite dry if you over cook it even a little. These oven baked chicken nuggets have an Italian flair using Parmesan cheese and oregano, plus olive oil for a great flavour. Leave them to rest a few minutes before you eat them, serve with your favourite dipping sauce.
