Jinx also said, "You're too late" when she was hallucinating about Silco in the prison cell, idk if that's a coincidence or not, but I feel like it enhances this theory even more.

Here is more credence to your theory. The moment that Ekko doesn't react with a response trying to stop her (where he says "I' think I'm just gonna sit here for a minute") she realizes he is real, so she instead decides to jump off the ledge instead of causing collateral damage because she realizes that she can't let her death be a jinx by killing Ekko in the process

Great theory! I believe it's true as well. Whether or not Jinx knew Ekko was still alive somewhere, she clearly thought he was just a hallucination in this scene.

She’s also noticing him get more and more bloodied in real time. Ekko takes the damage back with him when he rewinds. That was a nice detail, although if I were jinx I would definitely be more and more convinced that it’s a hallucination

Some of it may be because she can see him bleed as a result of the repeated explosions and using the machine and she knows firsthand that hallucinations don't bleed as well as knowing he's doing something strange with the machine.

Another theory: Jinx didn’t know he time traveled (like heimendiger didn’t know when he exploded), from her perspective he showed up once. It means Ekko tried different approaches until he said the right thing (it explains the way he regretted after saying the name powder).
It’s not really conversation it’s him trying again and again.
