Just because someone is in a straight relationship doesn't mean they're straight. Demisexuality is when you can only experience attraction to people you have a very strong bond with and it's the case with Jinx and Ekko. None of them ever show physical or romantic attraction to anybody else but to each other.

And it's in the asexuality spectrum. Asexuals in general can fall in love, they just don't experience sexual attraction, like Viktor.
