In the British and American fish and chips - it’s served with ketchup, tartar sauce and malt vinegar. The tartar sauce is for putting on the fish. The malt vinegar is typically for the fries/chips. The ketchup is for either. Some people prefer ketchup on their fish rather than tartar sauce. Americans tend to use ketchup on their fries, the Brits typically use malt vinegar on their French fries - which they call “chips”.
