MEASUREMENTS & INGREDIENTS:
2 tbsp any oil
1 teaspoon cumin seeds
2 medium onion
6-8 cloves garlic
2 inch ginger
3 small tomatoes or half canned tomatoes
1/2 teaspoon turmeric
2 teaspoon curry powder (or substitute with 1 tsp each cumin and coriander powder )
1 teaspoon cinnamon (optional)
1 cup coconut milk (optional if wanted creamy)
1 1/2 cup chickpea brine or water
1 teaspoon Garam masala
2 cups spinach or any greens
Fresh coriander for garnish
