You may already have rice vinegar in your pantry for Asian recipes, but it’s super versatile and can be used in a variety of dishes. I personally love using it for dressings, marinades and sauces. It has a really mild and mellow flavor that isn’t too overpowering and it’s made with simple ingredients. I always have the natural rice vinegar in my pantry and reach for it most often, but seasoned rice vinegar, which has a bit of salt and sugar added, is such an easy way to add a pop of flavor to any dish.

Here’s how to make this tasty salad:

3 cups cooked rice (I used brown rice)
1 ½ cups chopped cherry tomatoes
1 cup crumbled feta cheese
½ cup diced red onion
½ cup chopped parsley

Dressing:
⅓ cup olive oil
2 Tablespoons natural rice vinegar
1 Tablespoon lemon juice
1 teaspoon maple syrup
1 teaspoon dijon mustard
½ teaspoon sea salt
¼ teaspoon pepper

1. Add all the dressing ingredients into a bowl and whisk until combined.
2. In a large bowl, combine all of the salad ingredients, pour dressing over and stir to combine.
3. Store in an airtight container for up to a week.
