Great video as always! I love Nonno Pasquale's simplicity and knowledge. I've been making wine from juice for the past few years since our family stopped making wine from grapes and what I find is that the juice is usually at a reduced sugar content because it already underwent some fermentation with the grape skins. I just bought my grape juice for wine last week and the Brix was approximately similar to yours but I also tested the alcohol percentage to be at about 10% already. The wine undergoes what's called primary fermentation before they press the skins and sell the juice product (just like how you made wine last year!). It's worth a check, otherwise keep up the great work and great content. Salute!
