In all seriousness it was so awe-inspiring to see Kayama-san so meticulous with every part of his craft, right down to his subtle mannerisms. Wonderful to see.

In addition to all the comments about his artistic finesse- can we just appreciate that the man made Campari from scratch?! I kept wondering where the bottle is, and then realised he's just used the herbs to make it! This is different level alchemy.

Just had the pleasure of actually visiting this place. It’s called Ben Fiddich and the drinks are fantastic. A bit pricy but well worth it for the experience and the product. Kayama-San was not working last night but all the workers there are just as careful and elegant. Truly master craft bar tending.

Edit: My mistake, I went to the downstairs bar B&F, also run by Kayama-san that night, but went up the 9th floor to Ben Fidditch the following week.

I know to many this might look like pretentious and over exaggerated but in the bartending community people like him, Marian Beke, Simone Caporale (just to name a few) are complete genius and no different to Michelin star Chefs . The work, study and dedication they have put into this profession in mind blowing. Especially in Japan being a bartender is seen as a honourable profession and the making of each single cocktail is treated as a ceremonial and unique experience. I really invite anyone to dig into the mixology world

Mechanical movements like oiled clockwork, elegant like a dancer, precise and smooth like a well-made manuscript, yet filled with energy and momentum. A glass filled till the border. No more, no less. And that is what makes it amazing.

Though every aspect of this video is quality, I find his small, repeated mannerisms to be the most satisfying. The way he agitates the shakers, the twirl of the spoon into the water, how he twists the bottles and presents the glasses. It is all ritual. Excellence, then, is not an act, but a habit.
