Mexican here (from Guadalajara, where Birria is traditional from) ... Skip the Chipotle next time. It is not needed at all and it changes the flavors way too much, you can also do without the sugar but add a healthy splash of white vinegar and try getting Chile Morita

Dope!!! Gunna try this. Also for anyone with an instant pot, don’t be afraid to pressure cook yo beef. I couldn’t notice a difference from slow roast so that’s another option if you’re lazy but really want beef.
