Keto Berry Crumble Bars | TPH Low-Carb Blueberry Recipe

FULL RECIPE:
Crust:
-1/4 cup erythritol
-1/2 tsp fine salt
-6 Tbsp melted butter
-2 cups almond flour
-2 Tbsp oat fiber OR coconut flour
Mix all the crust ingredients together, reserve 1 cup (8oz) aside for later, press the remaining crust dough into a prepped 8"x8" square baking pan. Bake at 325F for 15-20 minutes or until edges are golden brown.
Berry Filling:
-1/4 cup allulose
-2 cups blueberries (or any other berries)
-2 tsp lemon juice
Mix together the filling ingredients, pour over top the freshly baked crust, bake for 15-20 minutes.
Crumble the reserved 1 cup of crust dough over top of the half-cooked berry filling, then continue baking for an additional 20-25 minutes.
Cool fully before slicing.
