Chicken Lo Mein Recipe

The best chicken and vegetable noodles. Asian noodles
INGREDIENTS:
2 Tbsp cooking oil
12 oz dried lo mein noodles
2 medium chicken breast, cut into bites size pieces
1/2 of a red bell pepper, sliced
1/2 of a medium yellow onion, sliced
4 oz or a handful of sugar snap peas
1/2 cup of shredded carrots or 1 carrot , julienned
3 cloves of garlic, minced
Chopped scallions
Salt and pepper, to taste
For the sauce:
3/4 cup of chicken stock
3 Tbsp hoisin sauce
3 Tbsp low sodium soy sauce
1 tsp freshly grated ginger
1 tsp cornstarch
1 tsp brown sugar
1 tsp sesame oil
INSTRUCTIONS:
1. Bring a large pot of water to a boil.
2. Combine all the ingredients for the sauce in a medium size bowl and stir together until there’s no lumps of cornstarch or sugar.
3. In another bowl, season chicken with salt and pepper and 1 tbsp of the sauce. Let it marinate for 10 minutes.
4. In a large skillet over high heat, add 1 Tbsp of cooking oil, allow it to get hot. Cook chicken until fully cooked, 8-10 minutes. Remove from heat to a clean plate.
5. At this point start boiling the noodles until desired tenderness.
6. Add 1 Tbsp of oil to the same skillet, cook veggies for about 3 minutes. Add minced garlic and cook for about 1 minute. Add cooked and drained noodles to the skillet along with the sauce. Stir everything well and cook for 1 minutes or until sauce is glossy and thickened. Add chicken and stir well. Sprinkle chopped scallions on top.
