A tip from a keto cook: roast radishes as a potato substitute. The little red radishes halved and roasted on the bottom of a sheet pan with fresh chopped onion and garlic and a little celery and a judicious amount of carrot underneath a spatchcocked chicken is delicious. Large Daikon radishes cut and substituted in stews is wonderful as well. I also finely mince radishes (of either variety) to bulk up chilli and casseroles. Love your channel, Cassandra. I enjoy your videos because a lot of what you do transfers directly to us old folks who like to "homestead" as much as we are physically able to, but who are not longer able to do the full-blown, live off our land, down on the farm lifestyle that we once could do.
