I do the recipe for queso Fresco and after I let it drain completely, I placed it in my food processor, salt it and processed it until it was smooth...well...as smooth as Queso can get. Then I added heavy cream one tablespoon at a time as it was processing until it was very smooth like Philly Cream Cheese but not thin. We prefer it to be thick and have a solid consistency. I am curious as to how the recipe in the video above turns out when left in the fridge overnight.
