For Chilliwack sweet corn.. to freeze on the cob fast and easy
With the husk on cut the tip & silk off, then cut the excess stem and remove the outer husk leaving the inner husk on. Throw in a freezer bag, put in straw and twist the bag snugly around the straw. Draw out air till the bag is smooth around the cobs. Lasts 12 months in the freezer. Not blanching keeps the corn more flavourful. I learned this from the farmer I purchased my corn from.

Learned this back in the 70's. Everyone had gardens. August and September are the months to blanch and freeze. Sometimes early October.

You should use a bunt cake placing tip of cob into the hole. Cut downwards finish the tip on its own. Much easier without cutting your fingers off.

You can use a knife or spoon to cut off like 1 or 2 vertical columns of corn, and then with your thumb you can push the remaining kernels to the side into the empty area, so it pops right off.. to remove the entire kernel easily and quickly.

I freeze with butter salt pepper or olive oil and jalapeños. We add to salads, wraps. I actually do this with all my veg and then freeze in meal size bags. Drop bag in water to reheat open and serve.

I used to help my mom cut corn with blanching. We would cut and mix field corn(more starch{thickens}) and sweet corn we would also scrape all the juice from the cob. When we cook it for a meal we would and jalapeno and serrano peppers, so good.

Did this to fill a freezer every year for my Mom and Dad. Once we all got old we just froze four or five, husks and all in gallon freezer bags. We stacked up more than two dozen bags. We took a bag or two out for a couple hours before dinner. We husked it to boil quickly or put the whole ones, rinsed in water and placed on the higher rack of the BBQ. So much easier and just as tasty.

My dad did this when o was younger. He also did different kinds of peppers as well and everything was very good in the winter months. A lil taste of summer.

When you have leftover corncobs, make corncob jelly. It’s so good; tastes a lot like honey, only better!
