Gyoza!! My most favourite food! I once used the wrong skins (they were rice sheets for vermicelli rolls - it didn't work). I now use spring roll wrappers and it turns out just fine. I like my filling with pork and shrimp and the rest the same as your recipe. Must have with Lee Kum Kee chili oil with your umami dipping sauce! So delicious even to my sensitive Canadian taste buds it is not spicy, just full of amazing flavour!!
