How do you change your grip in the middle of the rally?

I was told the "hand shake" grip is for the eastern grip. The continental grip is the "holding a hammer" grip

I started playing pickleball in February. After suffering a Baker's cyst behind my knee that erupted from 50 years of tennis, I began as a beginner and quickly advanced to intermediate. Now I'm an advanced player, pushing the expert envelope. I've been using my western grip on my backhand and forehand until I get to the kitchen, where I slightly alter my grip. By the way, I have a blistering backhand using my western grip😉

Coming from tennis you can hit your backhand with a slightly bent arm as long as you finish with a straight arm

Ya know how so many times you're partnered with someone who just always pops the ball up almost every time they hit the ball? Is that a wrist thing? I can't even imitate this action, but would like to offer a solution or technique to help correct players like this that I'm partnered with... any ideas?
