Hey I am a Japanese and we all use Japanese knives in ordinary family kitchen. There are tons of good stainless steel everyday Corolla knives sold in Japan. A Japanese knife but for everyone😊

Japanese knives are better simply because some of the grinds are super thin lasers, and they have higher HRC, which means they have better edge retention. I'd rather take slightly longer sharpening my knives on my day off than be in the middle of service and realize my knife is too dull to use. They're super delicate, and you can't use them to chop bones and almost guarantee that if you drop one, they will break or chip.

If you want a knife thats like a dependable family suv go buy a german knife, but if youre feeling a lil bit fancy maybe like a urus or gemera go buy a japanese knife

What are you giving up for a Japanese knife? Esp the ones you show? All positive! Sure you might have “grip” with some knives but those also squeeze tomato’s not cut them. Sure one you “never sharpen” but it’s got a saw for a blade. These knives have good grips blades metal wood whatever else!
