Ender men absolutely master the art of disorientation, because they play audio around you, but not where they teleport. For example, if you make one mad, it might play an audio cue to your right, but actually teleport to your left. Don’t always assume the direction of the sound is where it is. They also prefer teleporting into your peripheral vision or behind you, and try teleport behind corners when they can. If you can spot them soon after they teleport you can get a couple of hits in before they teleport away again.

there is also a small mod called NoMorePumpkinBlur, you can wear the pumpkin helmet and there is no blur

In addition to the two-high ceiling, a trench will keep them from teleporting away when hit. I believe Flame on a Sword can cause them to also teleport.

One time I was about to nearly die from an enderman fighting me with other mobs, I tried to stare at the endermen but the mobs around me gave me a lot of trouble and I was trying to escape in a forest so it was even worse.
I tried putting blocks around me or dig down but there are a lot of mobs around me and I was so nervous.
I got to two hearts and the endermen is very close so I decided to exit the game, after a while I entered and the mobs disappeared.

So yeah, always exist the game if your near death.

The main problem is getting nervous, try to know what you can do at the moment and try the easiest way to escape. I should have tried to immediately escape instead of fighting the mobs around me.

Funny thing is, you don't even need to look at them. Could be in a brightly lit mine and walk pass them, guess the MF was having a bad day.
