My theory is that the endermen lost their humanity over time, and became more like animals, but having the intelligence of a human.
So I think the endermen think that having eye contact is a term of intimidation, so they get angry and aggresive at you to assert more dominance over you.

They really just realize who you are when they get a good look into your eyes.
When they know who you are they become jealous of you because you still know how to build, mine, craft, break, grief, troll, (etc) so they attack, thinking that they will gain knowledge of those things when they are done with you. The backstory of the enderman is just a little bit sad.

someone else's theory says they're telepathic and communicate in that type of way, so when they look into your eyes they go insane almost immediately it also makes sense with how their voices sound damaged like their vocal chords atrophied or something

My theory: Endermen used to be just like us, but their life in the End warped their physical form, they still maintain some characteristics of their previous forms (limited speech, picking up blocks, etc) but when they look you in the eyes they are reminded of the forms they once held, and they are angered by what they have turned in to, so they want to kill you out of jealousy

Nah. If u look straight into Enderman's eyes, they stop and gaze at you. Maybe they just think we see them because they are ugly, but having eye contact makes then think you are looking at them with respect
