Falafel Pita Hummus Tzatziki #homemade

Ever had a falafel sandwich? The falafel sandwich is one of the most widely eaten and enjoyed dishes from around the world. Normally it is eaten with a tahini dressing, but I opted for hummus and tzatziki. This popular sandwich is not difficult to make.
I made this with homemade pita, hummus and tzatziki, you can definately use store bought if you want, but what's the fun in that?

Tzatziki Recipe:
1 English cucumber, grated and squeeze the liquid out
14 oz strained Greek yogurt
1 garlic clove, grated on a Microplane
1/4 fresh chopped dill
juice of half a lemon, w the zest
salt to taste
2 tbsp olive oil
Falafel Mix Recipe:
3 C rehydrated chickpeas (raw)
1/2 med onion
1 C chopped flat leaf parsley
1 C chopped cilantro
1.5 tsp baking soda
1 tbsp salt
1 tbsp flour
2 tbsp ground cumin
Blitz all these ingredients in a food processor until fine. DO NOT grind into a paste. Cover with plastic and let the mix chill in the fridge for about an hour. Then you are ready to fry.
I used Safflower oil heated to about 350F and fried them for about 4-5 mins until nice golden brown. Let them rest on a wire rack to cool a bit and then serve.
