If they are there 14 years after Kitchen Nightmares, they are definitely doing something right. Not many of the places featured on that show are still around, of those that are almost all have new owners. Congratulations!

That's medium well..just a touch of pink before it starts to turn grey and become well done . Medium rare would be bordering red

not sure if you guys ever seen the show Bar Rescue, but i would love for you to visit some of those bars Jon Taffer rescued, just to see if that show is stagged or not too, wither it is or not, i still love Bar Rescue

That's a medium steak. Rare is red, medium rare is pink with a red center, medium is pink, medium well is traces of pink, well has very little to no pink.

Looks like a perfect medium -well to me.
This place looks great. A place where you could have a bottle of wine or two, take your time and enjoy yourself.

Risotto is a rice dish with arborio variety rice, it's thick and starchy and takes a long time to cook. The rice gets toasted in butter/oil and once it gets nice and crispy fried, stock and cheese are added a pinch and splash at a time until it binds up and then sometimes cream is added to finish, but always butter to finish. It ends up like a super tight rice porridge.

God those chops look to die for. Even with all the chaos in the original show it was obvious this guy was a quality chef. Also a top northerner, tells it exactly how it is.

That looks medium to medium well to me, medium rare still has some bits that look rare, or ima call it slimy looking.
