I take all the ingredients with an eye gauge. Wash and chop ripe tomatoes, wash and chop red pepper and onion. Put on fire, bring to a boil. Stir occasionally. Remove from heat and blend until paste is obtained (the resulting paste can be strained if you need a completely homogeneous mass). Put the resulting mass back on the fire, cook until it becomes a good dense mass. Let cool, pour into disposable cups and put in the freezer.
I use this paste in winter as a sauce (seasoned with my favorite spices), tomato paste and as a base for tomato omelette.
