🌟 Red smooth salsa # 1 - Mild in heat
Serving : 1 1/2 cups

1/4 medium white onion, roughy diced (3 oz)
2 garlic cloves, peeled
1 lb roma tomatoes, remove the stem area, dice
1/4 cup Avocado oil, stream

🌟 Roasted salsa # 2 - Spicy
Serving : 1 1/2 cups

4 ea tomatillos, cut in half (10 oz)
1 roma tomato, cut in half (4 oz)
1/4 ea medium white onion, slice into 3 pieces (3 oz)
2 garlic cloves, unpeeled

🌟 Green salsa - Mild
Serving : 2 cups

3 jalapeños, de-seed
1 serrano, cut in half (optional)
1 calabacita, Mexican zucchini (10 oz)
4 tomatillos, quartered (8 oz)
1/4 white onion, medium (3 oz)
3 garlic cloves, peeled
1/2 bunch cilantro, fresh

I just discovered your channel today and have spent all day looking at your videos. My husband is Mexican and I want to make him authentic Mexican meals as well as share the culture with our children who have never been to Mexico. I'm from the south where there is NO authentic Mexican food and his mother is not well enough to show me. Your videos are a God-send. Plus I like things SPICY! Even more so than my hubbie lol. Keep it up! I love how you tell about the culture while you cook. It's not only informative but fun to watch you cook! Thank you for being very detailed and including both spicy and mild versions. I know this is an older post, but I just found your channel a week ago. Every single recipe I have tried is F A N T A S T I C! Your directions are clear and easy to follow, and the ingredients are simple and usually very easy to find. Your channel has really inspired me to ditch the restaurant scene and start making all of my own fresh, wholesome Mexican food at home. Thank you SO MUCH for all that you do! **EDIT** - I forgot to mention that I just made these salsas and had to restrain myself from just eating them straight from the bowl 😂😂😂

A great way to de-seed things is with an apple corer. When I'm making jalapeno poppers I cut the stem side so there is still a little green wall. Then I use the serrated edge by cutting down at stem wall (keeping it intact) and then across. I'm looking forward to trying these salsa... the spicy one first!
