6 really got me into it. I miss the RIO track.

1-3 were great takes on the racing genre with a new flavor, 4 was the best mainly because of Top Gear, 5 and 6 were rushed, and 7 was litered with lootboxes at launch and only got better by the very end but by then it was too late, hopefully in the new one we get that fully animated pit crew, fully remodeled cars that aren't 3D models ripped directly from the Xbox 360 era with new textures, and a real penalty system for online play
