Craving something crispy, juicy, and full of flavor? Arayes are the perfect Middle Eastern street food—grilled pita stuffed with spiced ground lamb, bursting with bold herbs and spices. 🤤🤌🏾

Whether you’re hosting a dinner party or just treating yourself, these lamb-filled pita pockets will hit the spot every time.

Arrays Ingredients:

2 lbs of Ground Lamb
4-5 Pitas Cut in Half
1 White Onion (grated)
1 Tbsp Mashed Garlic
1/2 Bunch of Chopped Parsley
1/2 Tsp Cumin
1/2 Tsp Coriander Powder
1/2 Tsp Paprika
1/2 Allspice
1/2 Tsp Chili Powder
Salt & Pepper to Taste
Labneh (for Dip)

Method:
In a large bowl, mix all the ingredients with the ground lamb. Stuff the seasoned lamb into 4-5 pita halves. Grill or pan-fry until the bread is crispy and the lamb is cooked through, or reaches an internal temperature of 160°F.

Pro Tip: If you’re unsure whether the lamb is fully cooked, transfer the lamb-stuffed pitas to an oven-safe skillet and place it in a preheated oven at 300°F until it reaches your desired doneness.

BTW, the meat pockets are called ARAYES. I prefer ground lamb, but you can also use ground beef. Also, I’d recommend placing 1/3rd that amount of meat in each pita. The meat mixture goes into the pita raw, so you can easily undercook or overcook them. Less meat ensures they are cooked evenly and completely. I recommend tahini or tzatziki to dip them in. 😂😮😅

The Lebanese version isn't that thick. They're thin and crispy. They're also best with humus and cucumber pickles on the side. Try each with a squeeze of lemon

I am half Lebanese and was fortunate to have a great aunt who taught me how to cook Middle Eastern food. I’d go up to visit her at her cabin in the mountains every 4-8 weeks. We would spend the weekend cooking. One of my fondest memories! We’d place sheets of paper by each station in her U-shaped kitchen and cook 4-6 recipes at a time. She even taught me to make pita bread on the bottom of her oven while I sat on the floor!😂

Whoaaaa ! That’s too thick of meat inside a pita bread, I’m here in Jordan, “ Arayes “ an Arabic word, is not a thick stuffed bread, it’s thin, so the meat will be cooked well, AND, you brush abit of olive oil on the 2 sides of the bread then you put them on a grill or in a baking tray sprayed with olive oil then bake till the meat is cook, you don’t fry them, bcoz it will make the bread hard . Mix abit of diced tomatoes without the seeds with the meat too, to remain the bread & meat moist. Use garlic mayonnaise for dipping, it can totally add a great taste to the “ Arayes “

I’m middle eastern living in Seattle too. Something my middle eastern grandparents would do is add sparkling water to the meat mix, to fluff it.

Here in Egypt, it's called hawawshi. One of the few foods I like here. So delicious when crispy on the outside. Stuff it with a lil extra red onion just before you eat it and OMG.😋
