Fried Rice (Plov) Recipe:
INGREDIENTS:
1 kg moderately fat lamb, shoulder
0.2 kg lamb fat (fat tail)
1 Cup (250-300 ml) vegetable frying oil
1 large Carrot
2 medium size Onions
2 Cups of rice (500g) medium grain rice*
1 tbsp. Cumin (Black Zira)
1/2 tbsp. Barberry
1/3 tbsp. Saffron
1/2 tbsp. Dried Tomatoes
*IMPORTANT:
I recommend using parboiled rice for beginners. This way you will never overcook your rice. This is a common trick to make fried rice perfect.
HOW TO MAKE FRIED RICE (PLOV):
Heat the Oil in a Vok (or Kazan) about 10 min over high heat
Meanwhile cut the lamb fat into small bite-size pieces
Cut the lamb meat into large bite-size pieces
Brown the lamb fat and take off the pan
Place the Lamb meat and sprinkle with spices
Fry the meat 10 min over high heat
Meanwhile slice onions and carrot
Arrange sliced onions over the meat
Sprinkle with spices and cook 10 min over high heat
Arrange sliced carrot over the onions
Sprinkle with spices and cook 10 min over high heat
Cover with rice and set garlics on top
Pour cold water (0,4in | 1cm) over the rice
Sprinkle with spices and cover
Cook 60 min over low heat
Drain the oil
Remove Garlics, cover with a plate and turn
Place the Garlics on top
