I'm Thai. I'm OK with this recipe. Eventhough you add many things we don't use it in Thailand. I understand that you want to make a vegan version. Green curry itself has many variatiins of vegetable and meat. You can choose what you feel right(wich Thais might disagree). But I don't understand why westerners thing that we add lime juce into everthing. I thing it will make green curry flavor go wrong.

No chicken, no palm sugar, no fish sauce. Added mangetout, baby corn, baby aubergine, coconut sugar, vegetable stock and served on rice cooked in coconut milk. This is not real thai green curry, its some weird vegetable soup.
