Omelette Wrapped Fried Rice - Omelette Rice - Omurice
This is a Japanese inspired recipe known as Omurice, which is loved by both kids as well as grown ups. You can make this for lunch, dinner, or pack it for lunchboxes. Kids love having this.
Ingredients required for making Omelette Rice--- Serves 2
* Onion - 1 medium diced into small pieces
* Garlic - 2 big cloves of garlic, finely chopped
* Red jalapeno/ green chili (optional) - 1
* Cooked rice - 2 cups of cooked rice.I prefer using a day old cooked rice for making fried rice. If I plan to make this recipe the next day I cook a bit more rice for dinner so that I can save the leftover rice. Break any lumps in the rice by wetting your hands and gently loosen up the rice before adding to the pan. Take out the rice from the fridge just before cooking as that will prevent it from sticking to the bottom of the pan. If you cook fresh rice then remember to cool it down completely before making the fried rice.
* Frozen vegetables or fresh - ½ cup of green peas & carrots or any vegetables of your choice
* Eggs - 2 per person
* Salt - As per taste
* Butter - 1 teaspoon (optional)
* Oil - 5 tablespoons for fried rice + 1 teaspoon for omelette
* For the sauce ----
* Light soy sauce - 1 tablespoon
* Tomato ketchup - 1 tablespoon
* Red chili sauce - 1/4th teaspoon (optional)
