I don't waste my cheese cloths on bacon grease, being on a fixed income. I need em for making cheese & jams. I simply run the grease thru my seive 2-3xs, which filters out most unwanted material. What may be left isn't enough to bluster about. In fact, it adds to the flavor! Store in a fairly cool place so it doesn't turn rancid. I heat with wood, so i moved my grease to a cooler room than my kitchen. Too many heat registers in the kitchen. Hint: bacon sticks to Cas iron, even if it's mostly fat. Some cooks do prefer to melt down their bacon in a different pan if only rendering, not making a dish. Me, I use whatever floats my boat that day.

Do you have to put in the fridge or can you just leave on the counter? I’ve started saving it but I wanna make sure I store it properly. I had no idea you could put it in the freezer.

If you cook your bacon at a lower temperature, your grease will come out chunk-free and white as snow. You should see my bacon grease jar, it's glorious.
